Ngapi” means pressed fish. Fish paste and shrimp paste are the two kinds of Ngapi.It is usually dried in the sunlight after making from the fermentation of salted ground fish or shrimp.Like most dishes, there are regional variations of ngapi: it might be very salty or not salty at all, watery or thick, made with ocean fish or freshwater fish depending on the location.It is used in a versatile manner in that it is used in soup base, in salads, in main dishes and also in condiments.
